CHICKEN PICKLE/CHICKEN AVAKAYA/KODI PACHHADI



Chicken Pickle is very tasty tasty recipe.I learnt this recipe from my sister-in-law.She used to do this recipe for us.She told to me very easy method.This time i tried this recipe.why don't u try this recipe?

INGREDIENTS :

Chicken : 250 gms

Ginger garlic paste - 100 gms

Coriander powder - 50 gms

Cinamon & cloves powder - 4 tsp

Oil for frying

Lemon juice of 6 lemons.

Salt according to ur taste

Red chilli powder according to u r spicy level - approx 5tsp

Procedure :


    Cut chicken into small pieces

  • Wash chicken, add salt and red chilli powder and then boil the chicken without oil until water driesup.
  • Take a pan and deep fry chicken in the oil
  • Heat oil in another pan and add ginger garlic paste and stir it well up to 6 mins.
  • Add coriander powder and cinamon,cloves powder,salt and redchilli powder and fry upto 5 mins
  • When good flavour comes out the paste ,add the paste to chicken and mix well
  • Keep it aside until cool down.
  • Then add lemon juice and add salt if needed.
  • Chicken pickle is ready can serve with rice.

BEANS CURRY WITH FRIED CHANNADAL POWDER


INGREDIENTS :

Beans : 250 gms

Green chillies : 2

Red chillies : 1

Cumin seeds : 1/2tsp

Mustard seeds : 1/2tsp

Oil for frying

Urad dal : 1/2 tsp

Channa dal : 1/2 tsp

Salt to taste

Red chilli powder : 1 tsp

Fried channadal powder : 3 tsp

Coriander leaves : 1/2 bunch

Curry leaves


PROCEDURE :

Chop beans into small pieces and boil them in cooker.
Heat oil in a pan and add mustard seeds,cumin seeds,urad dal,channadal, red chilly and fry them. Add boiled beans into the oil and fry them. After 5 min add salt,turmeric and red chilly powder,fry up to 3 mins and then add fried channadal powder and coriander leaves.

RAGI & OATS MALT WITH FRUIT SALAD ( HEALTH DRINK)






This is very healthy dish.Any one can eat this,from infants to old people.It gives good health.
For infants have to give without fruits.

INGREDIENTS :

Ragi powder : 3tsp

Oats powder : 3tsp

Milk : 1 glass
Sugar : 1 tsp

Grapes
Apple

Banana
Strawberry

Kiwi
Dates ( karjura)

Honey

Cashew nuts

Badam

HOW TO PREPARE :
  1. Take oats and slightly fry them on stove without oil and grind them until it becomes powder.
  2. Take milk in a small bowl, add ragi & oats powder and mix it well.
  3. Heat milk in another bowl,when milk is boiling pour the ragi mix into milk and stir it well.
  4. After 5 min switchoff the stove.
  5. Keep it aside until its cools down.
  6. Then add fruits (can add any type of fruits),small pieces of dates,finely chopped cashew & almond pieces.
  7. Add honey and serve it.
For elders and dieabetics patients ragi & oats malt with butter milk is good.

CHICKEN DRUMSTICK BIRYANI




In this method u have to cook rice and chicken drumsticks separately

INGREDIENTS FOR RICE :

basmathi rice - 2cups
Whole garam masala
Coriander leaves - 1/2 bunch
Mint leaves - 1/2 bunch
Green chilllies - 3

Yoghurt - 2tsp
Biryani masala - 50 gms

Salt to taste
Onions - 2


INGREDIENTS FOR MAKING CHICKEN DRUMSTICKS :

Chicken legs - 3
Corn flour - 4 tsP
Red chilli powder - 2 tsp
Chicken masala - 1tsp
Salt to taste
Egg - 1

Turmeric - 1/4 tsp
2 Pinches of Red colour
Oil for frying
Bread crumbs : 5 tsp

HOW TO PREPARE CHICKEN DRUMSTICKS :

  1. Take fresh chicken legs and wash them.
  2. Marinate chicken with all ingredients.
  3. After marinate chicken legs keep aside up to 20 mins.
  4. Heat oil in a pan.
  5. Dip the marinated chicken into bread crumbs and drop the chicken in oil.
  6. Fry them on sim flame until it comes brown colour.

RICE PREPARATION :
  • Heat oil in to a pan add hole garam masala.
  • Make long thin slices of onion and fry them in to oil and add salt when onions get slightly brown colour and then add green chillies,mint and coriander leaves.
  • Add ginger garlic paste in to it,after fry that add some youghrt and then cook up to 3 mins.
  • Then add biryani masala and stir it well.
  • Take 4 cups of water for 2 cups of rice and mix it, when the water is boiling add washed rice into it and cover it with a lid.
  • After cooking for around 15 mins pls keep the flame to sim mode.

Add chicken drumsticks to the biryani.






ALOO PARATHA


Aloo paratha is a punjabi breakfast.In north India, aloo paratha is frequently used as break fast. I will tell how to make aloo paratha easily at home.




INGREDIENTS FOR ROTI DOUGH :
Wheat flour : 2 cups
Salt to taste
Enough water to make dough.
Oil - 1tsp ( optional)


INGREDIENTS FOR STUFFING :
Potatoes : 3
Green chillies : 2
Red chilli powder : 1 tsp
Salt to taste
Masala powder : 1tsp
Coriander leaves : 1/4 bunch
Coriander powder : 1 tsp

Butter for frying. ( It gives good taste to ur parathas)
MAKING DOUGH :

Take wheat flour in to a bowl and add salt,oil and enough water to make dough.Make soft dough and keep a side up to 30 mins.

FILLING :

First boil the potatoes.Take boiled potatoes and mash them.Add salt,coriander powder,red chilli powder,chopped green chillies and garam masala and mix well.




MAKING PARTHAS :
  1. Make dough in to balls.
  2. Make small size roti and place 2 tsps of stuffing on roti and close it.
  3. Take dust flour on stuffed ball and roll it to make a paratha.
  4. Take a tawa for paratha frying.
  5. Add butter on two sides of paratha while frying.
  6. serve with onion and lemon.
















GREEN CHUTNEY (HARA CHUTNEY)

We can call this as HARA CHUTNEY.It is a compulsory ingredient in some types of chaats.
it is very easy to make in home.

INGREDIENTS :

Coriander leaves : 1 bunch

Green chillies : 3 (chopped)

Lemon juice of 1 lemon

Ginger - Small piece

Cumin seeds : 1 tsp

Sugar - 1 tsp

Pinch of hing.


PREPARTION :

  • First blend all ingredients.
  • Then add chopped coriander leaves and blend them.
  • Add little water ,so that it is easy to blend.
  • Check seasoning,if needed add more salt.
  • Can Refrigerate this up to 2 months.

TAMARIND SWEET CHUTNEY



U can use this sweet chutney in to all types of chaats and topping on bread.


INGREDIENTS :

Tamarind pulp : 1 cup

Sugar : 1/2 cup

Salt to taste

pepper or red chilli powder : 1/2 tsp

HOW TO PREPARE :


  • Take tamarind pulp and add sugar,salt,pepper.


  • U can refrigerte this up to 2 months.

BHEL PURI ( CHAAT)




INGREDIENTS :




Puff rice (kurmura bhatti) : 1 glass
Peanuts : 2tsp
sev : 2 tsp
Papad : 10
Potatoes : 1 small
Red chilli powder - 1
Onions : 1 ( Nicely chopped )
Chat masala : 1 tsp
Coriander : 1/4 bunch ( Nicely chopped)
Salt little bit
Tamarind sweet chutney : 4 tsp
green chutney : 2 tsp

HOW I PREPARED :
  • Chop potato in to small pieces and boil them
  • Fry the peanuts.
  • Take a bowl and mix all ingredients.
  • Add more sev on the top of bhel puri.


















RASAGOLLA / RASAGULLA


It is a very famous indian sweet.We can call this as a bengali sweet.Easy to make it at home.


INGREDIENTS :

Milk - 1 ltr

Lemon juice of 1 lemon

(or) citric acid (or) white vinegar

Sugar - 1 cup

Elachi powder - 1/4 tsp

Water - 3 cups

Maida - 2 tsp

Preparation :

1. Take a bowl and boil milk.When boiling milk add lemon juice,and turn the stove off.

2. Seperate the paneer or curd or chenna

3. Take paneer in to a strainer and leave until cold ,up to 1 hr.

4. Mash the paneer with hand till soft and smooth wet dough.

5. For making sugar syrup take 3 cups of water for 1 cup of sugar.

6. Make small balls from paneer.

7. Drop the small balls in to syrup and boil them up to 20 min.

8. U can see the balls bulging.

9. Take glass and mix 1tsp of maida in to water and mix well,in the middle of boiling the rasagollas add 2 or 3 times maida water in to the bowl.

CHICKEN WINGS


INGREDIENTS :

Chicken wings : 4

Oil for frying

Red chilli powder - 2 tsp

Salt to taste

Chicken masala - 2tsp

Cornflour - 4 tsp

Turmeric - 1/2 tsp

Ginger & garlic paste : 2 tsp

Bread powder - 1/4 cup

Red colour

HOW TO PREPARE :

  1. Take fresh chicken wings and wash them .
  2. Marinate chicken with all ingredients.
  3. After marinate chicken wings keep aside up to 30 mins.
  4. Heat oil in to a pan.
  5. Dip the marinated chicken in to breadpowder ,and drop the chicken in oil.
  6. Fry them on sim flame up to 10 mins.
  7. Garnish with lemon and onions.

SPICY AMLET




INGREDIENTS :

Egg : 1

Green chillies : 2

Onion : 1

Coriander leaves : 1/4 bunch

Chicken masala : 1tsp

Red chilli powder : 1tsp

Salt to taste


PREPARATION :


1. Take a bowl and add chopped onions,chopped coriander leaves,red chilli powder,chicken masala and salt.
2. Add egg,and mix well.
3. Heat oil in a pan and pour it in to prepare the mixture and fry.
4. Then the amlet is ready to serve.

ANDHRA STYLE/TOMATO CHUTNEY/TOMATO PACHHADI(ROTI PACHHADI)


INGREDIENTS :

Tomatoes : 4

Green chillies : 3 according to ur spicy level

Salt to taste

Zeera - 1 tsp

Tamarind - 1 tsp

Garlic - 4 cloves

Musturd seeds - 1/2 tsp

urud dal - 1/2 tsp

Red chillies - 2
curry leaves

Coriander leaves - 1/4 bunch

Salt to taste


Preparation :


1. Heat oil in a pan and add urud dal and red chillies,fry them and keep a side.

2. Take oil in to another pan and add tomato pieces and tamarind,and cook them.

3. Take urud dal,red chillies,garlic,zeera in to a mixie jar and grind them.

4. Add tomato and tamarind to the above mixture,and add salt also.

5. Heat oil in to another pan and add musturd seeds,zeera,urud dal,red chillies,curry leaves and

coriander leaves.

6.Add the grinded tomato chutney to this and mix well.

7. U can serve with rice,breakfasts.






    FRIED CHANNADAL POWDER




    INGREDIENTS :

    Fried channa dal : 100 gms

    Red chilly powder : 4 tsp

    Garlic : 6 cloves

    Zeera : 1tsp

    Dry coconut powder : 2tsp

    Salt according to ur taste

    Method :
    1.Take fried channadal in to a mixie jar.

    2.In that add zeera,garlic,red chilly powder and dry coconut powder.
    3.Add salt.
    4.Grind all ingredients.

    5.u can use this in rice,breakfast and fry curries.

    DOSA






    FOR MAKING DOSA BATTER :

    Urud dal - 1 cup

    Rice - 2 cups

    Channa dal - 1/4 cup

    Methi seeds - 10 or 15

    FOR TOPPING :

    Onions - 1 (Finely chopped)

    Fried channa dal powder - 2 tsp

    Zeera - 1/2 tsp



    HOW TO PREPARE :
    • Soak rice ,urud dal and channa dal into water atleast 5 hrs or over night.
    • Blend all ingredients in to a fine paste.
    • For that add salt and little water (if necessary).
    • Take a bowl of batter and spread it on a pan with circullar movements.
    • Add onins,fried channa dal powder,zeera.It gives good taste to u r dosa.
    • Add ghee or oil according to u r taste.
    • Then the dosa is ready,serve with chutney and sambar.
    • Dosa is very famous indian breakfast.(Especially in south India).

    POTATO CURRY



    INGREDIENTS :



    Potatos : 4

    Green chillies : 3

    Onions : 2

    Oil : 3 tbsp

    Ginger & garlic paste : 1 tsp

    Urud dal : 1/2 tsp

    mustard seeds : 1/2 tsp

    zeera : 1/2 tsp

    Channa dal : 1 tsp

    Red chillies : 1

    Red chilli powder : 2 tsp

    Turmeric : 1/2 tsp

    Salt to taste


    METHOD :

    1. Take potatoes and peel them and cut them in to small pieces,and boil them.
    2. Take oil in to a pan ,add zeera,mustard seeds,urud dal,channa dal,red chilly.
    3. Add chopped onions ,and turmeric ,and fry them.
    4. when onions get slightly brown add ginger garlic paste and then fry up to 2 mins.
    5. Then add boiled potato pieces.
    6. Add salt & chilli powder,and add coriander leaves.
    7. It is a good combination with rice & roti and its indians favourite recipe.

    EGG BIRYANI




    Ingredients :
    oil - 4 tablespoons
    Basmati rice - 4 cups
    Eggs - 5
    Onion - 2

    Whole garam masala
    Green chillies - 4 (Slited vertically)
    Mint leaves - 1/2 bunch
    corinder leaves - 1/2 bunch

    Yoghurt -    1/4 cup
    Biryani masala - 50 gms
    salt to taste
    How to cook :
    1. Boli the eggs and keep it a side.
    2. Wash the basmati rice and soak it for up to 30 mins.
    3.Take oil in to a pan , in this oil add whole garam masala .
    4. Make long thin slices of onion and fry them in to oil and add salt.when onions get
    slightly brown add green chillies, mint and coriander leaves.
    5. Add ginger garlic paste in to it, after u cooked the paste add some yoghurt and
    cook up to 2 mins.
    6. Then add biryani masala and mix well.

    7. Take 3 cups of water and pour it in to the mixture ,after boiled the water add soaked rice

    in to it ,then cover it with a lid.

    8. After cooked 15 mins put u r stove in to as sim as possible.

    In another pan take butter and drop the eggs,and just rotate it for 3 mins.And put them into rice.U can serve with raitha.
