CRAB CURRY






INGREDIENTS : 

Crabs  :  3 Medium sized
Onions : 2
Tomato : 2 small
 Green chillies :3
Cashew nuts:  6
Ginger & Garlic Paste  :  2Tsp
Dhaniya powder  : 2tsp
Red chilli Powder :  11/2 tsp
Salt to taste
Turmeric Powder : ¼ tsp
Garam masalaPowder : 1 ½ tsp
Chopped  Coriander leaves


METHOD : 



Make a paste of onion & tomato.  Take cashewnuts, make it into a paste with  water. 

 Add oil in a deep kadai and add onion and tomato paste,  add slit green chillies,  turmeric and little salt.  Saute  them until the raw smell goes.  Add  2tsp of ginger & Garlic  paste. Stir it well.  Add cashewnuts  paste and stir well.  Add red chilli powder &  dhaniya powder.   Stir it for 3 mins,  then add the crabs and remaining salt and mix well till all the crabs are well coated with the masala.  Keep it for 2 mins and then add enough water.  Place the lid on the kadai.  Let it cook for 10 to 15 mins.  Make sure  the flame should be medium to low. Once the crabs almost done add garam masala and check the seasoning.  Turn off the heat  when the  curry  thickens.  Add chopped coriander leaves.  Simple crab curry is ready to serve. 

CHICKEN KOLHAPURI


INGREDIENTS :

For Making Masala :

Dry coconut  :  4 to 5 tsps
Cinnamon sticks  :  3
Black cardamom  : 2
Cumin seeds :  2tsps
Cloves : 10
Black pepper corns:10-12
Blade mace : 1
Sesame seeds : 4tsps
Poppy seeds (Optional)  :  1 tbsp
Red chillies :  8


Chicken : 700 gms
Onions :  2 medium
Tomato :  2
Cashew nuts :  5 or 6
Oil  :  3tbsps
Ginger garlic paste : 2tbsps
Salt to taste
Red chilli powder  : 2tsps
Turmeric  : 1/4tsp
Dhaniya powder :  2tsps
Garam masala powder : 1 ½ tsp
Coriander leaves  chopped : 2tsps

PREPARATION :
    


  •         Make a paste of cashewnuts and tomatoes.
  •    .         Dry roast 4 to 5  tsps of grated dry coconut,  3 cinnamon sticks, 2 black cardamom, 2 tsps of cumin seeds, 10 cloves, 10-12  pepper corns, 1 blade mace  4tsps of sesame seeds, 1tbsp of poppy seeds (optional), 8 red chillies  in a pan and set aside to cool.(Add ingredients one by one,   add sesame and poppy seeds at the end.)
  •           Grind  the roasted spices to a fine paste without adding water.
  •            Marinate chicken with half of the ground masala.
  •            Heat 3 tbsps  of oil in a pan,   add finely chopped onion and sauté till golden brown. Add  2 tablespoons of ginger & garlic paste and stir well.
  •             Add cashew & tomatoes paste  and stir well,  later add turmeric to it.
  •            After 5 minutes add marinated chicken and add salt, red chilli powder ( according to your spicy level) dhaniya powder and keep stirring it.
  •            Add 1 cup of water and cook on medium flame.  After 10 mins add rest of ground masala and mix it well, at the end add garam masala.
  •           Make sure the curry  consistency is thick. 
  • Check the seasoning and add chopped coriander leaves.


  •          Serve hot with steamed rice or roti.
  •      Adding cream is optional and  if you like can add 2 tsps of cream to your chicken kolhapuri.

FISH FRY




Many people thinks for fish fry need to add so much ingredients or masalas but no need to add many ingredients and with a few, basic ingredients we can make fish fry. I learned this simple fish fry recipe from one of my family friend, in this weekend  I tried this fish fry recipe. It turns out very well. The taste was too good… If you are making fish fry for kids, then select the fish with less bones like salmon, raa, cat fish .  I used Rohu fish for frying. Have this fish fry with sambar, this is an awesome combination. Try once this combination, then you want to eat again and again. :)

Rohu fish fillets  :   4 pieces
Salt to taste
Red chilli powder : 3 tsps or according to your spicy level
Turmeric  :   1tsp
Oil for deep frying

Clean fish pieces and keep it aside.  Take a wide bottomed bowl and add salt, redchilli powder, turmeric and add 1tsp of oil and mix these ingredients.  Dip fish pieces in this mixture and nicely spread the mixture on both sides of fish. Keep fish pieces in fridge for 24hrs. Don’t keep in freezer.  After 30 mins of  marination you can fry your fish, but if you keep this marinated fish in fridge for 24hrs, the taste would be too good.


Next day take the fish pieces from refrigerator and directly deep fry in oil. No need to add any ingredients. Garnish with coriander leaves.  Simple and fabulous fish fry ready to serve.  

MUTTON BONE SOUP


Mutton bone soup is a nutritious food for all age groups. This soup can give for patients as nutrient supplement.




INGREDIENTS :
Mutton bones : 500 gms
Onions : 1 big
Green chillies : 2
Cloves, cinnamon : 2 each
Red chilli powder : 2tsp
Salt to taste
Dhaniya powder : 1tsp
Garam masala : 2tsp
Grated coconut : 2tsp
Khus khus / Poppy seeds : 1 tsp
Turmeric : ½ tsp
Water - 1.5 lt



Wash mutton bones and keep it aside. Take a blender and add poppy seeds and coconut, blend it into a smooth paste.

heat oil in a wide bottomed kadai and add cloves, cinnamon fry them. Add chopped onions and green chillies, sauté them 2 mins. Then add ginger garlic paste and stir well.


 Add mutton bones, turmeric and salt.




 Stir it and add 1.5 litre water and cover it with lid.

Cook it on a low flame, after 1 hour add red chilli powder, Coriander or dhaniya powder, garam masala and poppy seeds paste and stir it well. Boil it for another 2 hours and check the seasoning. . If you want more soup you can add water.Add chopped coriander leaves and serve hot. Full cooking process takes 3hours.




ANDHRA PRAWN CURRY / ROYYALA KURA

Andhra Prawn Curry is a tasty and simple sea food recipe.


 
INGREDIENTS :

Prawns : 500 gms
Oninons : 2 Medium
Green chillies : 2
Cloves & Cinnamon : 4 each
Garlic cloves : 3
Poppy seeds/ Khus khus/ Gasagasalu : 2 tsps
Coconut : 5 tsps
Dhaniya or dhaniya powder : If powder, use 2 tsps or dhaniya use 11/2 tsp
Ginger garlic paste : 2 tsps
Salt to taste
Red chilli powder : 1 tsp or according to your spicy level
Turmeric
Garam masala powder : 11/2 tsp








PREPARATION :

Take peeled & cleaned fresh prawns, add turmeric 1 tsp and little salt. Boil them in a pressure cooker, after 3 whistles turn it off.

 In a mixer jar make powder of poppy seeds, then add cloves, cinnamon, garlic cloves and coconut. Paste them with adding little water. Keep this masala paste aside.
Heat 2 tsps of oil in a wide bottomed vessel, add chopped onions and green chillies. Add little salt and turmeric to bring out the moisture, and fry until they become transperant. Add ginger garlic paste and stir it well. Add the masala paste and add enough water to get right curry consistency. Cook for 10 mins, Add salt red chilli powder. Stir occasionally. Then add boiled prawns to it.

Cook for 5 mins, then add garam masala and cook for 2 mins. Check the seasoning. Garnish with coriander leaves. Serve with rice or roti.
































FISH CURRY / ANDHRA CHEPALA PULUSU

                    FISH is a healthiest diet.  It is important to include fish in healthy diet atleast two servings per  week. Chepala pulusu or fish curry  is just making fish in tamarind sauce along with spicy ingredients.

HEALTHY BENEFITS OF EATING FISH:


Seafood provides protien, fats and oils, vitamins and minerals. Fish is a unique source of the omega 3 fatty acid. It is helps to prevent heart disease,  lower blood pressure and reduce the risk of heart attacks and strokes. Eating fish prevents breast and colon cancer.  Eating fish during pregnancy may help reduce the risk of delivering a premature baby. Fish may help people with diabetes mange their blood sugar levels. So many healthy benefits  are there in eating fish. So start eating fish atleast twice a week .  :-)

      Now i am explaining how to preapre fish curry or chepala pulusu in andhra style. Chepala pulusu is one of the famous and favourite recipes in  andhra. It's very very tasty and yummy recipe. This curry is truly delicious. Try it your self !!!

Compare to other non-veg curries fish curry  is very easy to prepare.

INGREDIENTS : 

Fish ( Any type of fish )

Oil   -   4 tbsp

Cloves -  4

Cinnamon -  2

Onions  -  3 big

Green chillies -  3

Ginger & garlic  paste -  2 tsp

Turmeric -  1/2 tsp

Salt according to u r taste

Red chilli powder -  2 tsp

Tamarind paste  -   4 tbsp

Garam masala -  2 tsp

Coriander leaves  for gournishing.


  •  Clean and wash fish throughly and keep it aside.

  •  Take a wide pan  and heat oil and add cloves and cinnamon, let them pop.
  •  Add finely chopped onions and green chillies, add little salt and turmeric to it.
  •  When onions become transperant add ginger and garlic paste and stir well.

  •  Add red chilli powder and salt to it and mix it well. 
  • For making tamarind juice take a cup of water and add tamarind paste in it and mix it well or u can use freshly squeezed tamarind juice also.

  •  Add tamarind juice in onions mix. Add fish pieces in tamarind sauce and keep u r stove in low flame and cook it for up to 20 mins. Don't stir after adding fish pieces.
  • . Check the seasoing if need add salt. Add coriander leaves for gournishing.

  • Serve with steam rice.

CHICKEN LEGS CURRY

 INGREDIENTS :

Chicken legs :  5

Onions : 3

Green chillies :  2

Tomato  :   1 big

Turmeric :  1/2 tsp

Cloves :  3

Cinnamon : 3

Cashewnuts :  8

Khus khus or poppy seeds or gasagasalu  :  1/4 cup

Chicken masala  : 2 tsp

red chilli powder  :  2 tsp

Salt  according to u r taste.

Oil  : 3 tbsp


   Wash the chicken legs and keep aside.

   Chop the onoins and tomato pieces . Make a paste of both  khus khus or poppy seeds and cashewnuts .

   Heat oil in a deep bottomed pan and add cloves and cinnamon, fry them.
  
    Add chopped onions and green chillies.  Add little salt. Fry until they become translucent.

   Add ginger garlic paste and stir well.







   Add chopped tomato pieces and mix well. Fry for 3 mins.







   Add chicken leg pieces, cover it with lid and  leave it on  low flame until water comes out from the chicken and evaporates.  Stir occasionally. Add red chilli powder,turmeric and salt.




  Pour 1 cup of water in to leg pieces  and stir well.Cover it  with lid.





  When the leg pieces half boiled add khus khus paste and let it cook.

  Add chicken masala powder  or garam masala.

  Cook until u get desired curry consistency.

  Garnish with chopped corainder leaves.

SPICY PRAWN FRY/ROYYALA VEPUDU


Prawn curry is one of my favourite dishes.yesterday i tried this curry ,and i got many compliments from my friends&relatives.you can also try this recipe.


INGREDIENTS :


Prawns : 250 gms


Green chillies : 3


Onions : 2


Red chilly powder : 2 tsp


Coriander powder : 2 tsp


Ginger garlic paste : 2tsp


Cloves : 4


Cinnamon : 3


Salt to taste


Oil : 3 tsp


Coriander leaves : 1/2 bunch


How to prepare :


Wash prawns and add little quantity of salt and turmeric. Boil them.

Heat oil in a pan and add cloves,cinnamon and zeera,fry them up to 2 min.Add finely chopped onions and salt and turmeric.When onions become transperant add green chillies,ginger garlic paste and stir it well.Add coriander powder and continue stiring.Then add prawns without water and mix it well.After 3 mins of cooking add red chilly powder,salt and stir it well.After 5 mins add garam masala and mix well.Fry up to 2 mins and add coriander leaves and serve hot for better taste.

SPICY FISH FRY/ CHEPALA VEPUDU


WOW!!! DELICIOUS!!! THIS IS VERY DELICIOUS RECIPE.THIS IS SOUTH INDIAN SPICY SPICY CHEPALA VEPUDU / FISH FRY.
ESPECIALLY ANDHRA SPECIAL CHEPALA VEPUDU.

INGREDIENTS :

Fish pieces : 4

Onions : 2

Green chillies : 2

Red chilli powder : 2tsp

Corinder powder : 2 tsp

Ginger garlic paste : 2 tsp

Turmeric : 1 tsp

Oil : 3 tsp

Salt to taste

Coriander leaves : 1/2 bunch ( finely chopped)

Cloves : 2

HOW I MAKE THIS :


Some people like this recipe with little gravy.

FOR GRAVY FISH FRY:

Wash fish pieces and marinate with red chilly powder,ginger garlic paste ,coriander powder,salt,turmeric.Keep it aside up to 10 mins.Mean while take a pan and heat oil and add cloves,finely chopped onions and fry them.When onion become trasperant add marinated fish pieces and fry.Rotates fish pieces.Fry up to 20 to 25 min then fish pieces become soft then add coriander leaves.

FOR DRY FISH FRY :

Wash fish pieces and marinte with all ingredients as i said above.keep aside up to 10 mins.Take a pan and heat oil ( 2 or 3 tsp enough) and keep fish pieces on pan,and fry, rotate them.Fry them until it becomes soft.serve hot.

SPICY ANDHRA CHICKEN FRY/ KODI EGURU(IGURU)/ANDHRA KODI KURA

Hmmmmmmmmmmmm YUMMYYY ,this is very tasty recipe.I like this recipe very much.Chicken fry/kodi eguru  is my mom's recipe.My mom specially do this recipe for me.I called this recipe at home as Kodi eguru/kodi kura.This is an  andhra special kodi kura.
Chicken fry / kodi eguru is a very famous recipe in andhra pradesh.Kodi eguru is very tastey especially with naatu kodi.In andhra during special occasions people usually make this recipe.In hotels & restaurants also this is very special dish.I will tell how to make chicken fry / kodi eguru very easily.

INGREDIENTS :

Chicken : 500 gms

Onions : 4 ( finely chopped)

Green chillies according to u r spicy levels

Red chilli powder : 3 tsp

Garam masala : 2 tsp

Turmeric : 1t sp

Cinnamon : 3

Cloves : 4

Coriander powder : 2 tsp

Cumin powder : 2 tsp

Salt to taste

Coriander leaves :1/2 bunch


HOW TO MAKE :

Wash chicken pieces and marinate with ginger garlic paste ,red chilli powder,salt and turmeric.Boil the chicken in a cooker up to 3to 4 whistles.Take a pan and put chicken in to that and fry until the water is evoporated.
Take another pan and heat oil,add cloves,cinnamon and fry.Add onions,salt,turmeric and fry them.When onions become transparant add green chillies and ginger garlic paste and stir it well. Then add cumin powder and corinader and fry u p to 3 mins and add boiled chicken and stir it well.Add red chilli powder,garam masala and coriander leaves and again stir it well for 5 mins. Then andhra's favourite recip[e chicken fry / kodi eguru is ready to serve.Serve with rice,chapathi.

CHICKEN WINGS


INGREDIENTS :

Chicken wings : 4

Oil for frying

Red chilli powder - 2 tsp

Salt to taste

Chicken masala - 2tsp

Cornflour - 4 tsp

Turmeric - 1/2 tsp

Ginger & garlic paste : 2 tsp

Bread powder - 1/4 cup

Red colour

HOW TO PREPARE :

  1. Take fresh chicken wings and wash them .
  2. Marinate chicken with all ingredients.
  3. After marinate chicken wings keep aside up to 30 mins.
  4. Heat oil in to a pan.
  5. Dip the marinated chicken in to breadpowder ,and drop the chicken in oil.
  6. Fry them on sim flame up to 10 mins.
  7. Garnish with lemon and onions.
