MOOLI - ALOO PARATHA / DAIKON RADISH&POTATO PARATHA

  Mooli/radish is a root crop. In andhra, people call it as 'Mullangi'. Some people don't like to eat mooli (Including me),  so i have tried mooli with aloo.  This occassion i want to discuss about Mooli/ radish/Mullangi.

 The mooli or daikon radish is a member of the Brassica family of vegetables, which also includes Brussel sprouts and broccoli. All of these have anti-cancer properties and are of great health benefit.

The Egyptians made oil with the seeds of this radish and it has been found that they contain a high percentage of glucoraphenin, a more potent anticancer agent than the glucoraphosatin found in the roots.

The benefits of radish against certain ailments and on certain body parts :

Jaundice: Radish is very good for the liver and the stomach and it is a very good detoxifier too, that is, it purifies blood. It is miraculously useful in jaundice as it helps removing bilirubin and also checks its production.
Piles: Radish is very rich in roughage, i.e. indigestible carbohydrates. This facilitates digestion, retains water, cures constipation (one of the main causes for piles) and thus gives relief in piles. Being a very good detoxifier, it helps heal up piles fast. Its juice also soothes the digestive and excretory system and this also relieves piles.
Weight Loss: Radishes are very filling, i.e. fills your stomach and satisfies your hunger easily without giving you many calories, as they are low in digestible carbohydrates, high in roughage and contain a lot of water. It is a very good dietary option for those determined to lose weight.
Cancer: Being a very good detoxifier and rich in vitamin-C, folic and anthocyanins, radish helps cure many types of cancer, particularly those of colon, kidney, intestines, stomach and oral cancer.
Skin Disorders: Vitamin-C, Phosporous, zinc and some members of vitamin-B complex, which are present in radish, are good for skin. The water in it helps maintaining moisture of the skin.
Urinary Disorders: Radishes are diurectic in nature, i.e. increase production of urine. Juice of radish also cures inflammation and burning feeling during urinating. It also cleans the kidneys and inhibits infections in kidneys and urinary system. Thus it helps a great deal in curing urinary disorders.

Apart from above benefits, radish is a good appetizer, mouth and breathe freshener, laxative, regulates tabolism, improves blood circulation, is a good treatment for headache, acidity, constipation, nausea, obesity, sore throat, whooping cough, gastric problems, gallbladder stones,dyspepsia etc.

Now let's come to the recipe :)

INGREDIENTS  :                     FOR DOUGH  :

Mooli / Radish : 1                      Atta

Aloo  :  2 Medium size               Salt to taste

Green chillies : 2                         Water

Onion : 1/2

Salt to taste

red chilli powder :  2 to 3 Tsp

Dhaniya powder : 3 tsp

Garam masala powder : 11/2 tsp

Turmeric : 2 pinches

Coriander Leaves

Butter





METHOD : 

Mix together atta and salt to taste. Add water and knead into a stiff dough. Cover and rest it for ten to fifteen minutes.

peel and grate the radish. Heat the pan and add finely chopped onions, grated mooli, dhaniya powder,salt, red chilli powder, garam masala, little turmeric, finely chopped green chillies. mix well and fry till the radish become dry.

Take 2 medium sized potatoes and peel it. Cut each potatoes into 6 to 8 pieces and boil it in a pressure cooker, no need to add water for boiling. Mash the boiled potatoes and add salt, red chilli powder, dhaniya powder, garam masala, little turmeric and chopped coriander leaves.

Mix fried mooli and aloo. Mix it well.


Divide the dough into equal portions. Flatten each portion. Take some dough and roll into small chapathi put 2tsp of stuffing and cover all the sides. Make sure the edges thinner than the centre and gather the edges and roll into a ball. Roll out into a paratha.







Place paratha on the hot tawa. Turn over and add little butter. (can use oil /ghee.)  Turn over and add some more butter on the other side too. Roast till both sides are golden and crisp on the outside. Serve hot with yoghurt.

EGG SANDWICH

INGREDIENTS

Egg - 2
Bread slices - 4
Tomato slices - 4
Onion slices - 4
Lettuce leaves -2
Salt as required
pepper as required
Mayonnaise - 4 tsp
Honey mustard - 4 tsp


PREPARATION

   In a large sauce pan, add oil on medium heat. Crack eggs in pan and cook to desired firmness. Season eggs with salt and pepper. Cook on both sides of the egg and keep it aside. Now spread mayonnaise and honey mustard on bread slices. Cover it with lettuce, tomato slices, onion slices and cooked egg with bread to make two sandwiches. Serve warm.

EGG BAJJI

INGREDIENTS

Eggs - 4
Besan Powder - 1 cup
Baking soda - 1/2 tsp
Salt as required
Onion - 1
Coriander leaves - 1/2 cup
Chaat masala - 1 tsp
Sev - 4 tsp
Lemon juice - 2tsp
Roasted peanuts - 4tsp
Red chilli powder - 1 tsp
Oil for deep frying


METHOD 

      Boil eggs, peel them and keep aside. In a mixing bowl, add besan, baking soda, red chilli powder and salt. Add enough water to make thick batter. Heat oil on medium heat for deep frying. When oil gets hot, Dip the boiled eggs into batter and coat with thick besan batter. slowly drop the coated boiled eggs into the hot oil. Deep fry them until they turn light golden colour all over it. Remove bajjis from heat. After it gets cooled, cut egg bajji into half. Take a wide serving plate and place the half bajjis, layer each with chopped onions, coriander leaves, chaat powder, red chilli powder, salt, sev, lemon juice. Add roasted peanuts at the last.

MIXED VEGETABLE SOUP

INGREDIENTS :

Cabbage                              Corn
Carrot                                  Mushroom
Beans                                   Baby corn
Potato
Cauliflower
Brocoli

INGREDIENTS FOR SEASONING :

Maggie vegetable stock : 1
Onion sliced  : 1 Small
Butter - 2tsps
Olive oil - 4 tsps
Pepper powder
Lemon Juice : 1 tsp

PREPARATION : 

                    Take cabbage,carrot,beans,potato,cauliflower and brocoli. Cut it and add more water and maggie vegetable stock and pressure cook it. While cooking add salt, the maggie vegetable stock already contains salt, so careful when you add extra salt. Grind all the cooked vegetable in along with the water and make it paste. In a bowl pour oil, fry onion sliced and add  corn, mushrooms pieces and babycorn pieces and cover it for few minutes, ( no need to cook completely, you should be able to bite when you take soup). Now add the paste into the pan make it liquid and boil it for a while. Take it off the stove and add little bit of butter for taste. Now veg soup is ready and while serving add pepper powder and lemon juice and serve it hot.

HOMEMADE HUMMUS



A classic arabic treat.  Normally you can get ready-made Hummus in any super market. But there's no need to buy it ready-made when it's so simple to make yourself.

INGREDIENTS : 

200g Canned Chickpeas
2 tbsp Lemon Juice Or more
2 Crushed garlic cloves
1 tsp Ground Cumin
100ml Tahini (Optional)
4 Tbsp water
2Tbsp extr virgin olive oil
1Tsp paprika
Salt
4 rounds of Pitta bread



METHOD :                                                                           

Drain the chickpeas and rinse under cold water in a sieve. Keep a few whole chickpeas to one side for serving. Mix the chickpeas, lemon juice, garlic, cumin, salt, thini and water in a food processor, and blend well until you have a thick, creamy puree. Add a splash more lemon juice, a pinch more garlic and cumin or salt to taste. 

Spoon the mixture onto a dinner plate, and make it smooth by pressing with the back of a spoon. Drizzle with extra virgin olive oil and scatter with the whole chickpeas.


Sprinkle with paprika and serve with pitta bread, warmed in the oven for three minutes and cut into quarters.






MINI CHEESE CAKE


INGREDIENTS : 

Milk powder - 8 tbsp

Sugar - 5tbsp

Yoghurt - 2cups

Cheese Kiri cubes - 3

Dream Web powder  - 1

Digestive biscuits  - 20 pieces

Butter - 3/4 cup


Method :

  Mix the crushed biscuits finely with butter then distribute in small paper templates. mix the remaining ingredients in blender for 5 minutes. Distribute little of the mix in each biscuit base template to fill 3/4 template. Place these into the oven for 10 minutes or until the mixture solidifies. Now let them cool for sometime and then adorn them with readymade pie filling or jam of your choice. Spray a little pistachios for decoration and place them in the refrigerator to cool until they become nice and soft.



APPLE CRUMBLE

APPLE CRUMBLE


        A delicious desert, quick to make, for both winters and summers !!!



 INGREDIENTS :

Green apples peeled and sliced  - 5 cups

Plain flour - 1 cup

Oats  - 3/4 cup

Brown sugar - 1/2 cup

Butter -  120gms

Cinnamon Powder  - 1tsp

Salt - 1/2 tsp


PREAPRATION :
   Set oven at 180 degrees C. Grease baking tray and layer the apples slices in it. Sift dry ingredients into bowl and rub butter in the mixture. Add sugar and oats. Mix well. Sprinkle the mixture over the apples and bake for an hour. Serve hot with vanilla ice-cream.
ORANGE POUND CAKE

INGREDIENTS : 

 All purpose flour  -  1 1/2 cup

Vanilla extract    -  1tsp

Baking powder   - 1 tsp

Sugar  - 1/2 cup

Orange Juice  -  1/4 cup

Orange zest  -  1 tsp

Melted unsalted butter  - 1/4 cup

Milk  -  1/4 cup

Last but not least,    Eggs  - 2


PREPARATION : 


        Ina mixing bowl, take sugar,eggs,melted butter and mix well till it forms a smooth mixture. To this, add vanilla extract, baking powder, orange juice and orange zest and mix well. Now add all purpose flour and mix well till the mixture turns smooth. Add milk to it and combine well. Preheat the oven for 350 degrees F.
Meanwhile, grease the round baking pan with butter, pour batter into the greased pan. Bake in preheated oven for 50 minutes or till a toothpick inserted into the cake comes out clean. Place it on a rack to cool, Slice and serve at room temperature. Can use choclate sauce or powdered sugar or any fruit icing to decorate it.



   

CHRISTMAS CAKE



                           "MERRY CHRISTMAS"   A christmas special cake for you all.




INGREDIENTS  : 

Semolina  -    250gms

Sugar      -   250gms

Freshly grted coconut  - 500 gms

Eggs  - 3

Water - 45 gms

Unsalted softened butter   -   100 gms

Baking powder   - 1tsp

Vanilla essence    - 1tsp


HOW TO PREPARE :


     Grind the coconut in 45gms of water. Now add the semolina,egg,sugar,butter,baking powder and vanilla essence. Mix it well and let it keep for 4-5 hours. Cut the foil or butter paper and line the cake tin.  Now grease it with butter and pour the mixture in the pan. Preheat the oven and set it on 200 C and let the cake bake for 1 hour. To test if the cake is baked just pierce the sharp side of the knife the deep and if the knife comes out clean it's done. The sides will brown well. Once done put off the bottom flame and burn the top flame keep the oven open and let the top brown slightly. Remove and let it cool.


FISH FRY




Many people thinks for fish fry need to add so much ingredients or masalas but no need to add many ingredients and with a few, basic ingredients we can make fish fry. I learned this simple fish fry recipe from one of my family friend, in this weekend  I tried this fish fry recipe. It turns out very well. The taste was too good… If you are making fish fry for kids, then select the fish with less bones like salmon, raa, cat fish .  I used Rohu fish for frying. Have this fish fry with sambar, this is an awesome combination. Try once this combination, then you want to eat again and again. :)

Rohu fish fillets  :   4 pieces
Salt to taste
Red chilli powder : 3 tsps or according to your spicy level
Turmeric  :   1tsp
Oil for deep frying

Clean fish pieces and keep it aside.  Take a wide bottomed bowl and add salt, redchilli powder, turmeric and add 1tsp of oil and mix these ingredients.  Dip fish pieces in this mixture and nicely spread the mixture on both sides of fish. Keep fish pieces in fridge for 24hrs. Don’t keep in freezer.  After 30 mins of  marination you can fry your fish, but if you keep this marinated fish in fridge for 24hrs, the taste would be too good.


Next day take the fish pieces from refrigerator and directly deep fry in oil. No need to add any ingredients. Garnish with coriander leaves.  Simple and fabulous fish fry ready to serve.
